Chilli Con Carne Recipe - Serves 3-4
Ingredients
2 tablespoons oil
1 large finely chopped onion
1 lb minced beef
1 large can of chopped tomatoes
1 teaspoon 5ml chilli powder
Water
1 large can red kidney beans
Method
Heat oil in frying pan over medium heat
Fry onion until a light brown color
Add the minced beef and keep stirring until the mince has been browned
Spoon the mixture into a medium sized pan, leaving behind the excess oil
Add the can of tomatoes, including the juice
Add the chilli powder
Add enough water so that the mixture is just covered
Slowly heat the pan until the mixture is just bubbling and turn the heat down to simmer
Put the lid onto the pan and simmer for 20 minutes
Drain the juice out of the can of kidney beans and add the beans to the pan
Turn up the heat until the contents simmer and then turn the heat down to simmer again
Simmer for 15 minutes
Serve on rice
