Spicy Fish Taco with Green Chilli Recipe - Serves 4
Ingredients
1 teaspoon ground cumin
1/2 teaspoon ground chilli
1 teaspoon ground paprika
1/4 teaspoon salt
4 x 4oz fillets of your favorite fish with the skin removed
1 tablespoon olive oil
4 soft corn tortillas
1 cup of cooked rice
1 large green chilli with the seeds removed and chopped into thin slices
1 cup roughly chopped fresh cilantro leaves
1 lime, cut into wedges
Method
Put the cumin, chilli, paprika and salt into a bowl and mix well
Wash and dry the fish fillets with kitchen paper
Sprinkle the spice mix over the fish and lightly rub it in
Heat the oil in a large frying pan over a high heat
Fry the fish for 2 minutes each side, until cooked
Put the tortillas onto plates and put the fish, rice, chilli and cilantro on top
Serve with the lime wedges
