Guacamole #1 Recipe - Serves 4-6
Ingredients
1 large tomato
2 large ripe avocados
1 finely chopped small onion
2 finely chopped garlic cloves
2 serrano chiles, seeded and finely chopped
1 tablespoon finely chopped fresh cilantro
Juice from 1 lime
Pinch of salt
Method
Blanch the tomato by cutting a 1/4 inch deep cross at the bottom of the tomato, boiling a large pan of water (at least 4 inches deep) and then adding the tomato
Only cook the tomato for 20 seconds, making sure the tomato is fully submerged, before removing it from the boiling water and adding to a bowl of ice cold water
Leave the tomato until it is cold and then peel it, cut it in half and squeeze gently to force out the seeds which you should remove and discard
Finally, chop the tomato finely and set aside for later
Peel the avocados, cut them in half and remove and discard the seed
Put the avocados into a bowl and mash them well
Add all of the other ingredients to the bowl and mix well
Serve immediately
